Oil your tagine *
Cut your vegetables in eatable pieces
Fry chopped onions in olive oil.
Pile up vegetables with the carrots, potatoes, in the bottom, like a pyramid.
Add the softer vegetable on top. Continue the pyramid.
Season with cumin, paprika, saffron, salt and pepper
Let sit on charcoal, oven or gas stove on low for 60 min
Add a bit of water after 20 min.

*) Pour oil in the base of the tagine and let it stay there before use approx 24 hrs.
